Steve
I'm sure there's loads of examples, but here's one to kick things off: - Eddie Van Halen's guitar solo starting at around 3:10 is really fucking good!
djdiggla
I didn't even know that was EVH. That's a cool bit of musical trivia. Pretty dope smooth as hell sax solo on Smooth Operator IDK if this counts as a pop song but Bernie's solo is pretty fresh. Never charted in the US so maybe doesn't count. Prince has a pretty great solos in this too. Really all around the song is fantastic and one of my favorite Prince songs. Love Shelia E killing it on the skins.
JHouse
Ha, I was going to suggest some Sade tracks, too. Really respect that she allowed her musicians to, uhhh, make some music.

Jam Burglar
I've always been impressed with how many parts there are in Tears for Fears "Head Over Heels" and how everything compliments each other. Sounds not that complicated but when you break it down it's like "whoah"https://www.youtube.com/watch?v=GsjhSm4YCfw
